But these beauties are far more usefull than you first think. I use my rapala fillet knife not only for fishing, but for carving a turkey, for slicing beef, for cleaning grouse, for slicing lunch meat. I have used fillet knives from $20 to $150. In my opinion the most important thing is to keep the knife sharp, and although the $150 ones hold their edge better, I find the cheaper ones do just as good a job of cutting despite having to sharpen a little more often.
